Here is a delicious slice recipe that is the perfect accompaniment to a nice cup of tea or coffee to relax with. Us busy people need to schedule time in to actually sit down and enjoy a cuppa – while still hot or at least warm once in a while! I rarely get to enjoy a hot coffee these days unless the children are all in bed, but am determined to start making time to do it for at least 5 minutes during the day….sometime very soon……hmmm…my track record is not so good with this so far though….maybe in 18 years? 🙂
1 x 250 gram packet of crushed Marie biscuits
3/4 of a 395 gram can sweetened condensed milk
85 grams of coconut
100g of melted butter
Coffee Butter Icing:
250g butter, cubed, at room temperature
450g (3 cups) pure icing sugar, sifted
60ml (1/4 cup) milk
Add coffee essence to taste or dissolve 2 tablespoons instant coffee granules in the milk.
1/ Mix all dry ingredients in a large bowl.
2/ Combine condensed milk and melted butter and pour over dry ingredients; mix well.
3/ Press into a greased slice pan and refrigerate until set.
4/ Ice with coffee flavoured buttercream icing.
5/ When icing has set, cut into squares.
I just love this slice, as I usually have the ingredients readily available in the pantry and it is so super easy and cheap to make and people always love it!
I also mix it up a bit and change the flavour of the icing too, I have made it with strawberry icing, orange, icing, lemon icing, chocolate icing, mocha icing, cherry brandy icing, almond icing, coconut icing, etc, whatever flavour you like! Just add that particular flavoured essence to taste and enjoy! I have also made it with chocolate icing, then while the icing was still wet, I scattered mini marshmallows and chopped raspberry jelly lollies on top to make it like a rocky road slice – oh my golly gosh – it was so delicious! You could add chopped nuts to the top or coconut too, whatever you like! Such a flexible base that goes well with pretty much any flavour topping you want to put on it!
